Hearty Eggplant-Zucchini Toss

Peel eggplant and cut it into chunks. Cut zucchini into 3/4 -inch rounds. Chop onion coarsely. Mince the garlic. Quarter or halve the tomatoes. Chop the celery, if using. Heat oil in large skillet over medium flame and add all the chopped vegetables, the tomato sauce, plus the oregano and salt and pepper to taste. Toss well, cover the pan, and cook, stirring the vegetables occasionally. You must keep watch over this dish - it will form a watery sauce at first, and the vegetables should be stirred in it until they are all somewhat cooked, about 10-15 minutes. Then remove the cover and cook a few more minutes until the sauce is reduced. I slightly altered the recipe to agree with the current contents of my refrigerator and my children's tastes. I used one zucchini instead of three. Fresh tomatoes are rarely in the crisper in a Wisconsin winter, so I substituted a 14.5 ounce can of diced, drained. These worked well. I like the Dei Fratelli brand. I used two Tablespoons of V8 juice rather than open up a can of tomato sauce. My children prefer basil over oregano. I have basil growing by the window and added about 10 leaves, gently torn, to the pot, and omitted the oregano. These minor adjustments made little difference in flavor, and my son and I enjoyed our eggplant and zucchini vegetable toss. My daughter resisted the vegetables, but that may have been more on principle rather than flavor. She did eat them after some encouragement (and threats). Serve as a sauce over rice or pasta. Meat may be added but is not necessary for a hearty meal. Makes 4-6 servings.
I consider this recipe for eggplant and zucchini toss tasty and nutritious enough to enter in the Monthly Mingle 29: Healthy Family Meals. As Anne Tedeschi said, this vegetable dish is hearty enough to serve on rice and make a meal. Last night however, I also served it with chicken baked in soy sauce, wine, ginger and garlic.
