You don't have to be looking to survive cancer to go looking for quick and easy recipes and helpful eating hints. You can simply be trying to survive life, specifically a life crazy with busy kids, work, and non-stop puppy trouble. Yesterday afternoon, after yet another action-packed day, I went looking for a recipe that was easy, the kids would like, and could be made with ingredients on hand. I knew where to look. It was the first book I grabbed: Donna Weihofen's, R.D. and Christina Marino's, M.D. The Cancer Survival Cookbook: 200 quick and easy recipes with helpful eating hints. These cancer-health professionals wrote the cookbook for their cancer patients. But their special sections featuring: Nourishing snack ideas; weight maintenance tips; special cooking techniques; food safety facts, and appealing foods for soft meals are helpful to everyone. Yesterday I was looking in the main section: Delicious recipes for the entire family.
I selected their recipe for chicken with mushrooms in wine cream sauce. The whole family likes chicken and mushrooms. The kids like cream, and I like wine so I figured this recipe would be a winner. It was. Click on "continue reading..." for the easy recipe.
Chicken with Mushrooms in Wine Cream Sauce
- 2 Tablespoons butter or margarine
- 1/2 cup finely chopped onions or shallots
- 1/2 cup white wine (I used vermouth)
- 1/2 cup chicken broth
- 1 cup half and half
- 4 chicken breasts, boneless and skinless
- 1/2 pound fresh mushrooms, sliced
- 1 teaspoon freshly ground pepper
Preheat oven to 325 degrees. Grease a 9 x 9-inch baking pan. In a small frying pan, saute onions, or shallots in 1 Tablespoon butter or margarine. Carefully add white wine and broth. Cook 2 minutes while stirring. (The volume of liquid will be reduced.) Add half and half. Bring to a boil, then reduce heat and cook 3 to 5 minutes, stirring until mixture thickens.
In a separate pan, brown chicken breasts in 1 Tablespoon butter. Place chicken in the baking pan. Place sliced mushrooms on the chicken. Sprinkle with pepper. Spoon cream sauce over the top. Cover pan. Bake for 1 hour or until chicken is thoroughly done. Check occasionally and add more broth if it gets too dry. Serves 4.

Calories: 365; Fat: 13 gm; Protein: 56 gm; Carb: 6 gm; Cholesterol: 160 mg; Fiber: very low
This recipe fit right in with the busy afternoon. I assembled it immediately after work, put it in the oven, and put the rice in the rice cooker. Then I drove the kids around town doing errands. Boy, was that fun! We arrived home just as the youngest was melting down from hunger. In the van. I'd kept him out of the snack box with claims that dinner would be on the table as soon as we walked in the door and they washed their hands. And the good news? It pretty much was, just had to grab the salad from the fridge and set the table. Yes, another healthy dinner served -- fast!

I completely agree with your thoughts about over-indulging. The pendulm swings both ways and to the same degree. Too much of a good thing now too often means too much of a bad thing to come. Don't mean to be doomsday here; it's just I've been wacked in the head by life too often not to pay a little attention sometimes.

Life itself will let you know if you are going beyond the limits. Treating yourself with toxic-food should be stopped now. You're right in your thoughts here. Over-indulging is never healthy. It will give you more harm than good.

All of us recognize the importance of a good an balanced diet, but the reality is that being trapped in a hecktic schedule, we don’t have time to find the places that offer healthy food and what is what we have right there, fast food.
